Veggie Quesadillas

Hey All!

While nannying for Amy and Kevin I learned how to make this delicious meal. It quickly became one of my all time favorites to cook and eat! Enjoy! And thanks Amy for the recipe :)

Ingredients:

1 Med. Red Onion

1 red bell Pepper

1 Med Zucchini

1 Med Summer Squash

2 Lg Carrots
1/2 can of corn

1/2 Can of black beans

1/2 Pkg. 1/3 less fat cream cheese

Pepper Jack Cheese - thinly sliced (Can substitute with thin slices of cheddar)
4 Flour tortillas

Olive oil

Salt Pepper

Cumin

Crushed Red Pepper (optional)


Directions:








1. Slice Onion finely. Dice red and green peppers. Shred the carrots. Chop the zucchini and summer squash.





2. In a medium saucepan heat 1 tablespoon of olive oil. Add fresh vegatables, salt, pepper, cumin, and
red pepper flakes. Saute.








3. Half way through sautéing, add half the can of corn and half the can of black beans. Continue to sauté until vegetables are slightly softened, easily poked with a fork.












4. Remove pan from heat and place veggies in a medium sized bowl. Add cream cheese and mix until the vegetables are lightly coated.











5. Return frying pan to heat and place a tortilla in it. Cover one half with pepper jack cheese. Top with a generous scoop of the vegetable mix. Fold over the tortilla into a quesadilla.




















6. When golden on one side, flip.










7. When cheese has melted remove from pan and repeat until filling is gone.

Serve immediately.
